I tasted my Pliny the Elder clone at 4 weeks of aging and was ready to scratch my tongue out. I got whole leaf Simcoes from a different shop to substitute for the pellets that morebeer was out of - and the alpha acids were a little too high.
Anyway- I hate to waste a hop monster so besides drinking it as a "liquor" what would you recommend? Blend with a neutral beer? Add some fruit flavors? Maybe make a little maple syrup IPA?

1- wait... time will smooth things out. (a couple months to a year/two)
2- share with friends who are hopheads...
3- mix with lightly hopped brew to taste...
